Codex Alimentarius (Hazard Analysis and Critical Control Points) is an internationally recognized structured operating method that helps food and beverage organizations identify and prevent food safety hazards. according to the law.

The introduction of HACCP is mandatory in many countries, including the USA and the European Union. The HACCP (Hazard Analysis and Critical Controls) rules and guidelines for the use of the system have been adopted by the Codex Alimentarius Commission.

HACCP is applied at all stages of production and preparation. The principles of the HACCP system can be implemented by all organizations in the food chain, regardless of their availability, regardless of their size and geographical location.
